The high Hermel plateau blooms in waves — wild thyme, then oak honeydew in the Barouk forests, then orange blossom down on the coast — and these beekeepers move their hives to follow the flowering, as Bekaa herders have always moved with the seasons.

Each harvest is extracted cold and jarred unblended, so a jar of oak honeydew tastes of the forest and nothing else. Hive adoptions fund new colonies; adopters get the honey of their own hive, lot code and all.
