Atelier Sitt Nadia

Everyone in the village calls her Sitt Nadia. Her atelier in the Chouf puts up preserves the slow way: fruit at full season, copper pots, small batches that are numbered, dated and released only after the lab confirms what her nose already knows.

Rose-petal jam in May, bitter-orange in January, fig with anise when the figs say so. Nothing is made to a marketing calendar — which is why some jars sell out for months, and why the ones on the shelf are worth the wait.
